Amarettos aren’t actually made from almonds but from apricot kernels. They have a similar flavour profile, but no nuts are actually used in the production. Other distillations are used, but the most important one is vanilla. The colour comes from burnt sugar caramel. Disaronno is the most famous and best-selling Amaretto in the world, with 70% of the market share. A massive hit of pungent bitter almond, marzipan and Christmas cake. That ‘cake’ quality is also in the palate, think butter cake and Victoria sponge. A long almond and marzipan finish but the touch of bitterness bring harmony to the drink.
